Ask the person sitting next to you which food is most closely connected with Valentine’s Day and I guarantee that the response will be “Chocolate!” Boxes of chocolate, stuffed animals bearing solid chocolate hearts, and even chocolate roses have become synonymous with February 14th. Of course, the word chocolate also conjures up images of sugary desserts that can quickly derail a healthy workout routine.

 

Instead of completely depriving yourself of Cupid’s special treats you can find some middle ground and a healthy-balance with dark chocolate-covered fruit. The darker the better! You might even be surprised to find that the fruit is often sweeter than the chocolate. Bananas, strawberries, and pineapples are all packed with vitamins and if you are going to have some sugar this Valentine’s day, it’s a lot better for you and your sweetheart than the refined stuff.

 

For best results, refrigerate the fruit before use and refrigerate immediately after dipping.

Chocolate-Covered Bananas

3 bananas

½ cup dark chocolate chips or baking squares

1 table-spoon sugar sprinkles

Wooden skewers or popsicle sticks

 

Directions

 

Use a microwave or a double-boiler to melt the chocolate. Place a skewer or popsicle stick into each banana. Dip half of the banana into the chocolate or drizzle it over the fruit. Sprinkle the banana with the sugar and refrigerate until ready to serve.

Chocolate-Covered Strawberries

1 package strawberries

½ cup dark chocolate chips or baking squares

 

Directions

 

Use a microwave or a double-boiler to melt the chocolate. Carefully dip each strawberry into the chocolate, then set the fruit onto a plate and refrigerate until ready to serve.

Chocolate-Covered Pineapple

1 package pineapple spears

½ cup dark chocolate chips or baking squares

¼ cup sweetened coconut flakes

Wooden skewers or popsicle sticks 

 

Directions

 

Use a microwave or a double-boiler to melt the chocolate. Place a skewer or popsicle stick into each pineapple spear. Dip half of the pineapple into the chocolate or drizzle it over the fruit. Sprinkle coconut flakes onto the chocolate while rotating the pineapple to get as much coverage as possible.  Refrigerate until ready to serve.
