You’ve probably tried the basic version of this trendy dish, but that was just the beginning. 1. Avocado Toast with Sunny Side Up Egg

What’s more delicious than avocado toast? Avo toast with a sunny side up egg on top. This super easy idea from Skinny Taste can make any morning feel like a fancy Sunday brunch.

 

What you need:

  • 1 slice whole grain bread, toasted
  • 1/4 small avocado, mashed
  • cooking spray
  • 1 large egg
  • kosher salt and black pepper to taste
  • hot sauce (optional)

 

What you do:

  1. Mash the avocado in a small bowl and season with salt and pepper.
  2. Heat a small nonstick skillet over low heat, spray with oil and gently crack the egg into the skillet. Cover and cook to your liking.
  3. Place mashed avocado over toast, top with egg, salt and pepper and hot sauce if desired!

 

 

2. Greek Avocado Toast

With feta cheese, cherry tomatoes and kalamata olives, this filling avocado toast recipe from Delish is anything but ordinary.

 

What you need:

  • 4 slices sourdough bread, toasted
  • 2 avocados, pits removed
  • 1/2 a lemon
  • kosher salt
  • Freshly ground black pepper
  • pinch of crushed red pepper flakes
  • 1/2 cup crumbled feta
  • 1/2 cup halved cherry tomatoes
  • 1/2 cucumber, chopped
  • 1/2 cup chopped kalamata olives
  • 1/4 cup chopped dill
  • Extra-virgin olive oil, for drizzling (optional)

 

What you do:

  1. Remove avocado halves from skin and place in a medium bowl.
  2. Immediately squeeze some lemon juice over the avocado. Season avocado with salt and pepper and mash with a fork.
  3. Taste for seasoning, adding more lemon juice if desired.
  4. Spread mashed avocado onto toast then top with feta, cherry tomatoes, cucumber, kalamata olives, and dill. Drizzle with olive oil and serve.

 

 

3. Mango Avocado Toast

What you need:

  • 1 avocado, mashed with 1 tbsp fresh lemon juice
  • 1 mango, cubed
  • 2-3 large slices of toast
  • Pinch of salt and pepper
  • 1 tsp radicchio, finely chopped
  • Optional: drizzle of EVOO or lemon juice to serve

 

What you do:

  1. Toast bread and set aside.
  2. Mash the avocado with the lemon juice. Cube the mango.
  3. Spread the avocado on the toast and sprinkle salt and pepper to taste over top. Top with mango and radicchio shreds. Serve! Add a drizzle of oil or squeeze of lemon over top if desired.
