3 Egg-cellent High Protein Alternatives to Carb Rich Breakfasts
Eggs are fantastic for breakfast (or any meal of the day)! You probably already do the usual – a scramble, a pan fry or perhaps you get creative on the weekend and poach them. Starting your day with protein can keep you fuller for longer and maybe even help you steer clear of the 10:30 a.m. donut delivery in the break room.
While we are all about moderation at In-Shape, and there is definitely a place for carbs in a healthy diet, we pulled together a few Egg-cellent alternatives for those of you looking to add some Egg-ceptional protein options to your breakfast lineup.
Egg-stravagent flourless banana pancakes
These low-carb, gluten-free, dairy-free, easy, and delicious ‘pancakes’ are a must try.
All you have to do is:
- Mash one banana in a bowl
- In a seperate bowl, whisk together 2 eggs
- Add the egg mixture to the bananas and stir
- Spoon on to a hot, buttered pan (like you would with normal pancakes)
While they don’t taste exactly like regular pancakes, they’re a delicious, totally new breakfast. So, don’t be such a chicken and give these a crack.
Egg-citing egg cups
These are a game changer for busy mornings with kids, workouts, drop-off and work commitments because you can make a batch of Egg Cups on a Sunday night and have them last a few days. Plus, they’re a great way to increase your morning veggie intake by packing them full of chopped greens. You basically add ingredients to muffin tins and top with eggs then bake. Try ham, cheese, bell pepper, mushroom, spinach, tomatoes, onions! Whatever you please. There are lots of recipes but we like this one from Pop Sugar.
Egg-streme Breakfast “burrito” with an Egg Tortilla
Rather than using a regular carb-rich tortilla for your favorite breakfast burrito, give Living Chirpy’s technique a try and make your own tortilla with two eggs and some cream. You won’t even notice the tortilla is missing.
