What You’ll Need: 

  • 1 bunch of kale chopped
  • 1 tablespoon lemon juice
  • 1/4 cup olive oil
  • 1 mango chopped
  • 1/4 cup pine nut
  • Salt and pepper to taste



What to Do:

  1. Chop the kale into pieces and sauté it in a pan with a tablespoon of olive oil for 3-4 minutes (or until the kale has wilted a bit)
  2. Then, in a bowl, add the kale from the pan, the chopped mango and the pine nuts
  3. Toss it together and add the rest of the olive oil, the lemon juice and salt and pepper
  4. Toss the salad one more time and it’s ready to serve!
