Brazilian Kale and Mango Salad Recipe
What You’ll Need:
- 1 bunch of kale chopped
- 1 tablespoon lemon juice
- 1/4 cup olive oil
- 1 mango chopped
- 1/4 cup pine nut
- Salt and pepper to taste
What to Do:
- Chop the kale into pieces and sauté it in a pan with a tablespoon of olive oil for 3-4 minutes (or until the kale has wilted a bit)
- Then, in a bowl, add the kale from the pan, the chopped mango and the pine nuts
- Toss it together and add the rest of the olive oil, the lemon juice and salt and pepper
- Toss the salad one more time and it’s ready to serve!
