This rice is the perfect base: just add your favorite mix of vegetables and proteins and you’re ready for a nutritious and delicious lunch!





What you need:

  • Cilantro
  • Lime
  • Garlic
  • 2 cups long grain rice
  • Coconut oil
  • Salt
  • 1 can black beans, drained and washed
  • Vegetables and protein of choice


What you do:

Cook your rice with a little salt and garlic. Once finished, fluff rice and add zest of lime and 1-2 tablespoons of coconut oil. Add black beans and a handful of chopped cilantro. Add salt and lime juice to taste.


When reheating in the microwave, cover your rice with a damp paper towel to keep it from drying out.
