Ah, beloved “zoodles” (or zucchini noodles!) -- everyone’s favorite guilt-free (and gluten-free!) alternative to spaghetti. While these fresh spirals are considered a lighter alternative, they also pack an impressive nutrient-dense punch.


Zucchini is loaded with various vitamins and minerals and is high in antioxidants that protect the body from free radicals. It also has a high-water content, making it the perfect fruit (yes, zucchini is technically considered a fruit!) to add to your post-workout meal. Rich in fiber and potassium, zucchini can be surprisingly filling despite being low in calories. It scores low on the glycemic index and is considered a great ingredient to add into your diet if you’re looking to lose weight by adding fibrous volume to a meal without the extra calories.


We all love a good bowl of spaghetti. There’s just something so satisfying about wrapping some sauce-drenched noodles around your fork and zoodles offer a nourishing substitute. You can also add in other vegetables like beets, carrots, and sweet potato to add more vibrancy and color.


As we move into the warmer months, our bodies become more inclined to lean towards lighter foods. Zoodles are the perfect summer meal addition, especially when tossed in a vibrant sauce packed with herbs to really honor the freshness the spring and summer bring.




Try this easy yet deliciously nutritious carrot and zucchini noodle dish with a lemon dill avocado sauce and get in tune with the seasons!


For the noodles:

  • 2 zucchinis
  • 1 large carrot


Spiralize the zucchinis and carrot into a large mixing bowl. You can use a spiralizer like this one here, or a julienne peeler or a mandolin. You can also buy them already spiralized for you at some super markets! Place the mixing bowl in the fridge while you make the sauce.


For the sauce:

  • 1 avocado
  • Generous handful of fresh dill
  • 1 tbsp. hemp seeds
  • 1 garlic clove
  • 2 tsp. nutritional yeast
  • 3 tbsp. filtered water
  • Salt and pepper to taste


Combine all ingredients to a high-powered blender and blend until smooth. Toss with the noodles and serve!
