Finish the year on a high note with these three, spectacular fruit-forward bubbly cocktails. And by fruit-forward, we mean it’s literally in your drink and maybe even balancing on the glass. If you’ve never made simple syrup before, now is the time to learn a new skill for the New Year...and maybe a new you?

 

The best part about making your own simple syrup is that you can control the amount of sugar that goes into the recipe. Usually it’s equal parts water, sugar, and fruit (or veggies or herbs or candy or…). But you can reduce the amount of sugar and just simmer the water a little longer to make the consistency more syrupy. You can also increase the amount of fruit if you desire as well! Soju Cocktail

  • 5 ounces prosecco
  • 1 tablespoon Yuzu Marmalade
  • ¼ ounce lime juice
  • Orange twist

 

Directions

  1. Combine the marmalade and the lime juice in a shaker filled with ice and shake hard for fifteen seconds to break up the jam.
  2. Strain into a glass and top with prosecco.
  3. Garnish with an orange twist and serve.

Perfect Persimmon

  • 5 ounces prosecco
  • 1 ounce persimmon simple syrup
  • 3-5 dashes of bitters

 

Directions

  1. Chop 1 large persimmon and combine with ½ cup water and ½ cup sugar in a small sauce pan.
  2. Bring to a boil and then simmer for 15 – 20 minutes.
  3. Allow the mixture to cool, then strain into a jar or measuring pitcher.
  4. Once the liquid is room temperature or cooler, add 1 ounce into a champagne glass and several dashes of bitters.
  5. Top with prosecco and serve.

Fantastic Fig

  • 5 ounces prosecco
  • 1 ounce fig simple syrup

Directions

  1. Chop up a few fresh figs and combine with ½ cup water and ½ cup sugar in a small sauce pan.
  2. Bring to a boil and then simmer for 15 – 20 minutes.
  3. Allow the mixture to cool, then strain into a jar or measuring pitcher.
  4. Once the liquid is room temperature or cooler, add 1 ounce into a champagne glass, top with prosecco and serve.
