Aside from a bowl of cereal, this is one of the easiest breakfast recipes you can make. And they look super fancy! The prep work is minimal, and the ingredients can be as modest or as complex as you’d like. Plus, you can customize them based on your nutrition plan. You can opt for a simple, protein-packed quiche that’s only made with egg whites and low-fat cheese, or you can use the whole egg and full fat cheese if that’s part of your healthy eating plan.

 

You can also fold in as many vegetables as you can find in the fridge, which pack them full of healthy vitamins, minerals and a dose of fiber too. Low-fat Cheese & Tomato Quiche

8 Egg whites

½ Cup lite shredded mozzarella cheese

4 Small tomatoes, sliced

½ Cup chopped celery (about two stalks)

Preheat oven to 350 degrees. Coat a pie dish with cooking spray and set aside. Combine the egg whites, cheese, and celery in a mixing bowl and stir well. Pour the egg mixture into the pie dish and then place the sliced tomatoes on top. Bake for 30 – 45 minutes, or until the center is firm. Allow to cool for 5 minutes before serving.

 

Green Veggie Quiche

8 Egg whites

1 Cup broccoli slaw or zucchini spaghetti

½ Cup sliced mushrooms

½ Cup soy cheese blend
