Easy Slow Cooker Tortilla Soup Recipe
What's for dinner tonight? Since we’re all working through the canned goods in our pantries, we’re excited to share Jen’s recipe for easy tortilla soup! You can make it in a slow cooker or just one (BIG) pot.
What you need:
- 3 chicken breasts, cut into chunks
- 1 large onion
- 2 cups carrot slices
- 1 can tomato sauce
- 1 can diced tomatoes
- 1 can garbanzo beans
- 2 cans kidney beans
- 1 can Campbell’s condensed cheddar cheese soup
- 2 teaspoons fresh minced garlic
- ½ teaspoon cumin
- Chili powder, to taste
- Salt and pepper, to taste
- 3 cups chicken broth
What you do:
Add all ingredients to your pot and stir. Cook on high for 5-6 hours or low for 8 hours. Top with cheddar cheese, sliced avocado, Greek yogurt and tortilla chips – and enjoy!
